Week 4: Pan Frying

  • Crab Cakes
  • Shrimp Cakes
  • Cheesy Orzo
  • Cucumber Salad

Crab and shrimp cakes used the same recipe, just substituted crab or shrimp. This is the recipe I started with. I used onion instead of shallot for the shrimp cakes, plus more garlic.

The orzo recipe started with this, but I heavily modified it.

Cucumber salad was just sliced cucumber, onion, green bell pepper, vinegar and sugar. It was much needed to cut through the heaviness of everything else.

As a side note, never put a gallon sized bowl of this in the refrigerator with just plastic wrap as a lid. If you must do it, do not put it on top of someones case of beer. As the contents of the beer box shift, the cucumber salad spills everywhere.

French Fry Ethics III

Rally’s has joined the disgrace.

The first time they asked, “Medium or Large?” and my anger built.

The next trip they asked, “Would you like to upsize to medium or large?” and my anger subsided.

The third trip returned to, “Medium or Large?” and Rally’s has been added to my list of fast food restaurants to avoid.

Week 3: Soups

  • Tomato Basil Soup
  • Loaded Potato Soup
  • American Grilled Cheese
  • Mozzarella Grilled Cheese

I am lazy and used canned tomatoes along with some fresh. The recipe was similar to this, but I omitted the sugar, and added some fresh roasted tomatoes.

Loaded Potato Soup is amazing, thus really not healthy. Basis for recipe here. I of course used whole milk, added garlic, and way more onions and bacon.

There wasn’t anything special about the American Grilled Cheese sandwiches. Just buttered whole grain bread with a couple slices of American cheese.

The Mozzarella Grilled Cheese sandwiches used Italian bread, sliced on the bias, with mozzarella  and basil.

Week 2: Chinese

  • Egg rolls
  • Fried Rice
  • Orange Chicken

Notes:
Egg rolls are not easy to deep fry if you have no luck with a deep frier that you borrowed from an old roommate. Finding the optimal temperature results in a range of burnt to greasy egg rolls with a couple of perfect specimens.

I love making fried rice. Trying recreate the ginger sauce I concocted a few years ago always eludes me.

Orange chicken is a wonderful mixture of tart and spicy.

This week was a fried food haven.
